Simple Caramel cake

I probably need to invest in some proper lighting for photography!? I bake and cook so much generally, but perfect cakes always come out of the oven in the evening. Meh, winter times, you leave home when it’s still dark and come back when it’s already dark again. No way to take pictures… 🙁 I managed to take some this morning. Got super inspired to make a simple caramel cake last night, so here’s the recipe and some photos.

Simple Caramel cake


  • 200 g butter, room temperature
  • 1.5 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 cup caramel (dulce de leche, caramelised condensed milk or similar)


  1. Preheat the oven to 170 °C. Prepare a 22 cm round or a 20 x 20 cm square baking form.
  2. Mix the soft butter with the sugar, add the eggs one at a time mixing well after each addition. Stir in vanilla.
  3. In a separate bowl, combine the flour with salt and baking powder, stir the mix into wet ingredients.
  4. Use 2/3 of the dough to cover the bottom of the baking form, bake for 12 minutes.
  5. Remove from the oven, add dollops of caramel all over the top. Divide the remaining cake dough into smaller pieces and use them to cover the top.
  6. Bake for about 30 minutes or until the top is golden brown.
  7. Serve and enjoy (I did not try it warm, but it would probably be nice with some ice cream).
