No-Bake Strawberry Cheesecake

I’ve had a small holiday a few weeks ago. My lovely boyfriend and I had a small holiday a few weeks ago. We went to Spain to visit some of the greatest places in Catalonia and even drove to Andorra for a day. I’m so excited to share some pictures of the sun, palm trees, and the sea. Oh, it was such a necessary escape for both of us.

And of course, there is a new recipe. I don’t often make no-bake cheesecakes, I prefer baked ones, but this is so much easier and less fussy. Nice one for slowly coming spring. :*

No-Bake Strawberry Cheesecake



  • 180 g biscuits (I used digestives with milk chocolate)
  • 100 g butter, melted

Cheesecake filling

  • 500 g mascarpone cheese
  • 1/2 cup sugar
  • 1/2 icing sugar
  • 200 ml heavy cream
  • 1 teaspoon vanilla extract
  • Juice of 1 lemon
  • 20 g gelatine
  • 8-10 strawberries



  1. Make the base. In a food processor pulse the biscuits to make fine crumbs. Mix with melted butter. The mixture should look like wet sand at this point. Transfer it to the baking tin and press down to the bottom. Let it set in the fridge for 30 minutes.
  2. Make the cheesecake filling. Prepare the gelatine according to package instructions. Using an electric mixer beat the mascarpone with the icing sugar until well mixed. Add vanilla, mix again. In a separate bowl, beat the cream with the sugar until soft peaks form. Fold into the mascarpone mix. Add the juice of the lemon. Add in the gelatine and mix well.
  3. Slice the strawberries in half and line the border of the baking tin in a way, that the cut part faces the outside. Spread the prepared filling. Let set in the fridge for 4 hours.
  4. Slice and enjoy 😉
