Chocolate chip cookies are heaven
Today’s realisation… My last post was written on the 18th of April… Getting worse and worse every month to actually post the recipes 🙁 I haven’t stopped cooking, of course not, May has just been too intense to sit down with a cup of coffee and write some incredible recipes down. My friend Amie stayed over at my place for nearly three weeks after our fantastic escape to Turkey, so we’ve been having some amazing meals during this time. However, we’ve just been too lazy (or too busy? you know, PhD students) to make dessert, hehe! Also, the weather in Poznan is so nice and hot, who wants to turn on the oven??
But then Wednesday was her last night at my place, so we decided to make it special. Making an evening special our style of course meant some chocolate chip cookies. And Shisha, and Coffee, and the nicest chill in the balcony 🙂
These chocolate chip cookies are so nice and chewy while still warm and then they go crunchy afterwards. Absolute Perfection!
Chocolate chip cookies
- 200 g butter, softened
- 2 cups sugar
- 2,5 cups flour
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 250 g chocolate chips (or chopped chocolate works just as well)
- Preheat the oven to 180 °C. Mix the softened butter with the sugar until well combined. Add the eggs and vanilla, mix well.
- In a separate bowl combine the flour, baking powder and salt. Stir in the flour to the butter mixture. The dough will be stiff. Stir in the chocolate chips.
- Form truffle size balls and place them on the baking tray leaving about 5 cm between them. Bake for about 10 minutes, remove from the oven, let cool and serve 🙂
